Cooking with Carole- Healthy Cornbread

Dry Ingredients: 1 1/4 c. cornmeal (whole grain) 3/4 c. flour (whole spelt or whole wheat pastry) 2 1/2 teasp. baking powder (Rumford) 3/4 teasp. salt Wet Ingredients: 1 egg 3 Tbl. melted butter 1 Tbl. honey 1 cup milk Directions: 1. Pre-heat oven to 425 degrees 2. Melt butter in skillet 3. Mix wet ingredients, add melted butter 4. Add baking powder and salt in with wet 5. Add cornmeal and flour 6. Stir ingredients, but do not over mix 7. Pour into pre-heated skillet 8. Place in pre-heated oven, bake for 15-20 minutes until edges are golden Serve warm with butter, honey, and fruit sweetened jam to pass.
